It all starts at the farm, from the passion and love of the Cav. Paolo Nocentini and from the help of Leonardo Francalanci, the manager of the farm. Together over the years, they were able to give new boost and development to the traditional farming activity, expanding and renewing the crops and directing it, since 1993, to the organic production of typical quality Tuscan products.

The uniqueness of the environment of the Fattoria San Michele a Torri, its wealth in biodiversity, make this charming facility in the heart of Chianti right outside Florence, a unique place where to rediscover flavours, fragrances and the authenticity of a lifestyle almost forgotten.

The farm has been committed to organic farming for years.

It believes that the use of only natural products, the respect of the biological equilibrium and biodiversity are at the basis of a type of farming that is respectful of the environment, of people and is able to produce foods of very high quality, healthy, guaranteed and certified, creating, therefore, an inescapable bond between, food, health and the environment.

The wine

The area of farm is located between the wine-making lands of Chianti Colli Fiorentini and Chianti Classico where fragrant, velvety, bold red wines are produced.

The most important vine variety is Sangiovese, with smaller additional areas of land of complementary vine varieties like Colorino, Canaiolo, Ciliegiolo, Montepulciano, Malvasia Rossa, Merlot, Cabernet Sauvignon, Syrah and white grape varieties of Trebbiano, San Colombano, Chardonnay, Pinot Bianco and Petit Manseng.

Fruity and modern wines are obtained, with a clean and round flavour which best enhance the traditional grape varieties.

Extra Virgin Olive Oil

Extra virgin olive oil is without a doubt a product that is a symbol of Tuscan agriculture and represents a flagship among the farm’s production.

Currently, approximately 28,000 olive trees are cultivated, among these the most important variety is Frantoio, and it is joined by Moraiolo, Leccino, Maurino and Rossellino Cerretano. In 2017, a company oil mill was set up, that makes it possible to best plan the pressing, one of the most important phases in oil production. It is a system conceived to produce oil of a very high quality, fruity, spicy and with a high concentration of polyphenol content.

The best production is bottled like “Laudemio”, a product of top quality.

Meats and cured meats of Cinta Senese PDO

Cinta Senese is an Italian swine breed raised since very ancient times. In 1338, in the fresco “Allegoria ed effetti del Buon Governo”, Ambrogio Lorenzetti depicts a Cinta Senese swine. It is a rustic breed characterised by a pink-coloured band all around the swine’s trunk, hence the name “Cinta”, or belt.
Our animals are raised in a semi-wild state in woods where the presence of oak, holm oak, olive and strawberry trees are prevalent, constituting their main source of nourishment These are supplemented with grass and simple grains like barley, corn and field beans are integrated. The quality of the meat and artisan workmanship makes it possible to obtain excellent cured meats.



Fresh pasta

The farm has a historic artisan pasta factory located right in Florence’s city centre.

The pasta is produced with durum wheat semolina flour with the aid of ancient machinery ornately restored, according to the traditional compression method.

The process is structured over four main phases: the preparation of the pasta dough, obtained by mixing all the ingredients; the kneading, which gives the mixture texture and elasticity; the roller compression, which gives the product the right roughness; the cut, which creates the shape.


Eggs, Vegetables, Honey, Flour

The garden - it is a project that starts with the land and allows us to produce vegetables in season, locally, in their genuine goodness. A choice that gives priority to a deep knowledge of the natural environment and respect in the cyclic nature of the seasons.

Honey - The bees, essential for an organic business, produce an excellent millefiori honey, made with the pollen of many plants, with a complex and floral taste.

Eggs - The chickens, the Livornese and ovaiole rosse, cannot be left out. Free-range and nourished exclusively with OGM-free feed, producing very fresh eggs each day.

Type 2 Flour - flour produced with ancient grains, of the Frassineto and Gentilrosso variety, cultivated on the farm and milled at the Molino Pasciscopi mill with traditional stone milling.
